Skate wings have long thin sections of juicy flesh either side of a simple bone. Sized between 300 and 600 grams, they make good eating and are very underrated – a great alternative to more expensive flatfish.
Cook exactly as you would plaice and Dover sole, it’s flesh doesn’t require much more flavouring than butter and lemon! This fish will arrive skinned and ready to cook.
- Have a mildly pronounced flavour with firm flesh. Their taste is similar to scallops. They also have a high collagen content which gives it a unique texture when cooked.
