This member of the cod family produces large white fillets with big flakes. Our pollack - which comes from Cornwall - is only distantly related to Alaskan pollock, which you'll find in every supermarket. It has to be acknowledged that most connoisseurs reckon pollack is not quite as good as cod or haddock, but it has become popular with celebrity chefs in recent years owing to good sustainability credentials.
