Lemon sole is a reliable flatfish which lies between plaice and Dover sole on the gourmet scale of gorgeousness. Its favourite place to live is around the coast of the UK, although it's also fairly common in Icelandic waters.
Neither part of the name is strictly speaking true as it doesn't taste of lemon and biologists will tell you it's not a true sole. Never mind - lemon sole a jolly nice fish, in plentiful supply and less than half the price of its cousin from Dover.
Features:
- The lemon sole is a right-eyed flatfish with a small head and mouth and smooth, slimy skin. It has a delicate, sweet white flesh and is best cooked simply, either grilled or fried.
