The grass carp, a freshwater fish also sometimes identified as buffalo fish, has a long, thick body and white flesh and steams beautifully. It can weigh as much as 8 pounds or as little as 3 pounds. I recommend against steaming the smaller whole carp because they contain many small bones. It is better to steam a fat, meaty, centre-cut section from a large grass carp.
