Dover sole is one of the finest fish in the sea. We couldn't describe its appeal better than US provisions specialist CMF: "The flavour of Dover sole is mild and sweet, elusive and enticingly different from more mundane fish.
It's a special indulgence and always worth the extra care and expense." And with its understated dark grey (sometimes brownish, as above) top skin and tiny scales, Dover sole looks as refined as it tastes. It's one of the few fish that is served on the bone at least as often as in fillet form - we sell it both ways.
